Savoury cake with yogurt, feta cheese and cold cuts

INGREDIENTS

FOR THE SAVOURY CAKE WITH YOGURT, FETA CHEESE AND COLD CUTS:

160 g DODONI strained yoghurt full-fat...

120 g DODONI PDO feta cheese...

240 g Self-raising flour...

160 ml Sunflower oil ...

1 tsp Baking powder ...

4 medium eggs...

10 slices of ham ...

2 sprigs of fresh thyme ...

Freshly ground pepper ...

DODONI fresh cow’s butter (to grease the cake tin) ...

A little flour (to coat the cake tin) ...

TO SERVE:

2 tbsp Olive oil ...

2 sprigs of fresh thyme ...

PREPARATION

Preheat the oven to 160°C (350°F).

Break the eggs into a bowl and beat them for 30 seconds with a hand whisk.

Add the yogurt to the bowl and mix until well combined.

Add the sunflower oil and mix well (for about 30 seconds).

Sift the flour into another bowl together with the baking powder, add the ham (chopped into small cubes), the thyme (finely chopped), season with pepper and mix gently together with a spoon.

Add the flour mixture to the bowl with the eggs and mix with a spatula until they form a smooth batter.

Add the feta (crumbled into small pieces) and mix all the ingredients together until evenly distributed.

Brush the walls and base of a 30 x 11 cm cake tin with the butter, sprinkle with the flour, and shake to remove the excess.

EXECUTION

Transfer the mixture to the tin and spread evenly.

Bake on the middle shelf of the oven for about 55 minutes.

Set aside to rest, and leave to cool for 30 minutes.

Serve the cake in slices, drizzled with olive oil and sprinkled with finely-chopped fresh thyme.
