Halloumi, chicken and pineapple skewers

INGREDIENTS

200 g filleted chicken breast, cut into bite-size pieces...

100g DODONI PDO halloumi cheese (cut into bite-sized cubes)...

100 g pineapple, cut into bite-sized cubes...

2 medium/large pita breads (preferably cornmeal), cut into quarters...

30 g olive oil...

½ teaspoon sweet paprika...

Salt and pepper...

EXECUTION

Add the chicken, olive oil, paprika, salt and pepper to a bowl.

Mix to combine, making sure the chicken is well-coated.

Place the chicken on a grill, frying pan or ribbed skillet till almost cooked.

Add the ingredients to the skewers, alternating the cubes of chicken, the halloumi, and the pineapple chunks

Place on the grill until the cheese is golden on all sides and serve on top of the pita bread quarters.
