Gingerbread Greek New Year’s Cake

INGREDIENTS

4 eggs...

120 g coconut sugar...

200 g DODONI strained yoghurt...

160 g olive oil...

100 c tangerine juice...

1 tsp vanilla extract...

150 g all-purpose flour...

150 g dinkel flour (or another 150 g all-purpose flour)...

2 tsp baking powder...

2 tsp Ceylon cinnamon...

½ tsp ginger...

⅓ tsp Clove...

⅓ tsp nutmeg...

PREPARATION

Preheat the oven at 180°C.

EXECUTION

Whisk the eggs well in a bowl until they become a fluffy mixture. Add the coconut sugar and whisk well. Then add the juice, the olive oil, the vanilla extract and the yogurt and continue whisking until the ingredients become a homogenised mixture. Finally, add the flour, the spices and the baking powder and mix. Transfer the mixture to paper baking pan with a 28 cm diameter or to a simple baking pan, which is greased and floured. Place the baking pan on the middle grill and bake for 25 minutes or until a knife inserted into the pan comes out dry. When the cake is cool, place the coin in it. Decorate and serve.
