150 g DODONI feta cheese
800 g courgettes
70 ml olive oil
2 garlic cloves
1 pinch salt
60 ml apple cider vinegar
Freshly ground black pepper
Wash the courgettes, dry and slice them in any shape you like, and place them in a bowl.
Add the olive oil and apple cider vinegar to the bowl, grate the garlic cloves, add the salt and pepper, and toss to thoroughly marinate the courgettes.
Place a grill pan or regular frying pan over medium heat and cook the courgettes until they are still firm when pressed with your finger. Put them in a baking pan and cover with plastic wrap so they can finish cooking in their own steam. They can be allowed to cool, or served as a warm salad.
Serve on a plate, crumble some DODONI feta cheese over the top, and sprinkle some fresh thyme. You can also drizzle some olive oil over the top.
