INGREDIENTS
100g DODONI PDO halloumi cheese (cut into bite-sized cubes)
2 baby zucchini, cut into 1cm thick slices
12 cherry tomatoes
2 medium/large pita breads (preferably cornmeal), cut into quarters
30 g olive oil
½ teaspoon dried oregano
Salt and pepper
Finely-chopped fresh mint
juice of ½ lemon
EXECUTION
Add the halloumi, zucchini and cherry tomato to a bowl.
Add the salt, pepper, oregano and olive oil.
Mix well.
Place on the skewers, alternating the halloumi, the zucchini slices and the cherry tomatoes.
Grill until golden.
Garnish with fresh mint, lemon juice and serve on top of the pita bread quarters
