Sandwich with caramelised halloumi cheese and prosciutto

INGREDIENTS

INGREDIENTS FOR THE SANDWICH:

1 bun of your choice...

40 ml olive oil...

1/2 ripe avocado ...

100 g DODONI Halloumi cheese...

2 tbsp honey ...

1 tbsp vinegar...

4 slices of prosciutto ...

INGREDIENTS FOR THE HERB SAUCE:

200 g DODONI full-fat strained yoghurt...

40 ml olive oil ...

1/3 bunch of dill...

1/3 bunch of parsley ...

1/2 lemon (juice and zest)...

salt ...

freshly ground pepper...

PREPARATION

For the sandwich:

Heat the olive oil in a medium frying pan over high heat.
|Cut the halloumi into one-centimeter slices and sauté it for 2 minutes on each side.
In a bowl, mix well the honey with the vinegar and add it into the pan with the halloumi cheese for one minute, until it is caramelised.
Transfer the halloumi cheese onto a plate until it is used.

For the herb sauce:

In a blender bowl, add strained yogurt, olive oil, dill, parsley, lemon juice and zest, salt, pepper, and blend until the sauce is homogenised.

EXECUTION

Prepare a medium-sized frying pan over high heat.
Cut the bread of your choice lengthwise and toast it for a minute in the pan to make it crispy.
Take the toasted bread and add the herb sauce on both sides, the caramelised haloumi slices on the bottom bun, the sliced avocado and finally lots of prosciutto.
Fold the sandwich and cut it in half.
