1 sweet potato
150 gr. DODONI halloumi (+ 10 ml extra virgin olive oil)
salt & pepper
1 handful of rocket
Peel the sweet potato and cut it into slices about 0,5 cm thick. Arrange the slices in a pan.
Bake in a preheated oven at 180 ° C for 7-8 minutes on each side. Cut the halloumi into slices
Put the extra virgin olive oil in a wide non-stick pan.
Saute the DODONI halloumi slices on both sides until they get a nice golden color.
Cut the avocado in half, remove the seed and peel. Chop the avocado using a fork, add the juice of half a lemon, salt, pepper and mix well. Set the toasts by placing the sweet potato slices at the base, then the avocado, the arugula and finally the DODONI halloumi on top.
