INGREDIENTS

10 eggs...

2 spring onions...

2 medium size mushrooms...

8 cherry tomatoes...

3 bacon slices...

½ pack DODONI Halloumi cheese...

½ green pepper...

½ red pepper...

4 tbsp olive oil...

½ cut fresh DODONI milk...

salt, pepper...

PREPARATION

Preheat the oven to 160 oC.

EXECUTION

Finely chop the spring onions and peppers, first into stripes and then into small squares. Wash the mushrooms, wipe them dry with a paper towel and cut into thin slices. Cut the Halloumi into cubes and the bacon into small squares. Cut the cherry tomatoes in half. Crack the eggs into a bowl and beat them with a whisk or mixer until fluffy. Then add the milk, along with the rest of the ingredients (onions, mushrooms, bacon, Halloumi, peppers, and tomatoes), as well as salt and pepper. Bake the omelette for 40-50 minutes, until golden and thickened, in a square baking dish. It can be served straight from the oven, cold or even the next day..
