INGREDIENTS

FOR THE TOMATO JAM

500 g cherry tomatoes ...

250 g granulated sugar...

Juice from 1 small lemon...

½ tbsp red pepper flakes or...

½ tsp chilli...

FOR THE HALLOUMI BITES

1 large egg (or two smaller ones)...

100 g DODONI Halloumi cheese...

Breadcrumbs...

Sweet paprika...

PREPARATION

Cut the cherry tomatoes in half and place them in a small saucepan.

EXECUTION

Add the sugar and bring to a simmer. Once it starts to boil, add the lemon and stir constantly with a wooden spoon, until the jam thickens (after about 10 minutes).

Remove from heat and add the pepper flakes or chilli.

 

Next, cut the Halloumi in small cubes.

Place the breadcrumbs, the paprika and a well beaten egg in separate bowls.

Line a small pan with parchment paper and preheat your oven to 180 °C fan.

Dip each Halloumi cube in paprika first, then in the beaten egg and lastly in the breadcrumbs and place them in a pan.

Alternatively, you can mix the paprika with the breadcrumbs.

Bake for 7-10 minutes until the cubes are golden brown.

Serve them hot along with the tomato jam.
