INGREDIENTS

300 g authentic DODONI Greek yoghurt, full fat 8% ...

200 ml cold water...

330 g all purpose flour...

300 g whole wheat flour & extra for working the dough...

1 ½ tsp baking soda...

1 tsp salt...

½ tsp dried thyme...

200 g DODONI Grated Cheeses Mix...

olive oil...

PREPARATION

Weigh all the ingredients for the bread and preheat the oven.

EXECUTION

In a bowl beat the authentic DODONI Greek yoghurt with water until homogenized.

In another bigger bowl mix the two flours with the baking soda, salt and thyme. Add the yoghurt mixture and mix until you form a thick dough. Add 150 g DODONI Grated Cheeses Mix and incorporate them into the dough.

Sprinkle some whole wheat flour on a clean surface and place the dough there. Knead the dough for 2-3 minutes, divide the dough and form 2 dough balls, adding extra flour (if needed) as you go so that it doesn’t stick to your hands.

Press the two pieces of dough into thick disks and place them on a baking tray covered with parchment paper. Score the dough with a knife, brush with a little olive oil and sprinkle with the rest of the DODONI Grated Cheeses Mix.

Bake in a preheated oven at 220C° for 20 minutes. Lower the heat at 200C° and keep baking them for another 20-25 minutes. Let them cool down for at least an hour and serve.
