
THE EXPERIENCE
INGREDIENTS
11 filo pastry sheets
100 g DODONI Feta cheese
100 g DODONI Kefalotyri cheese, grated
100 g DODONI Strained full fat Yoghurt
2 eggs, at room temperature
2 tsp chopped mint
1 pinch of pepper
50 g of strawberry jam
100 g DODONI cow butter
1 tbsp sesame seeds, for garnish (optional)

PREPARATION
In a bowl, beat the eggs until fluffy. Crumble the DODONI Feta and combine it with the grated DODONI Kefalotyri, DODONI Strained Yoghurt, pepper, and mint to make a paste. Cut the DODONI cow butter into cubes and melt it either in the microwave or in a saucepan. Fill a piping bag with jam.

EXECUTION 
Open a filo pastry sheet, sprinkle half its surface with some melted DODONI cow butter and fold it in half. Sprinkle with butter once again, spread 1 tbsp of the cheese filling lengthwise, leaving 1.5 cm around the sides, and use the piping bag to pipe a line of jam on top of the cheese filling. Wrap the roll halfway, then roll the edges towards the filling and finish off wrapping. Line a 30x40 cm pan with parchment paper, butter the top and place the rolls evenly spread out. Spread melted butter on the rolls, then sprinkle sesame seeds on top. Bake in a preheated oven at 200 °C, for 25-30 minutes, until golden. As soon as you take them out of the oven, they're ready to eat. They can be served hot or cold.
