mixed green salad with anthotyros & oranges

INGREDIENTS

1 head Boston lettuce...

1 escarole...

1 head green-leaf lettuce...

200 gr. DODONI anthotyros...

½ pomegranate, seeds only...

1 orange in segments for the salad...

250 ml olive oil...

½ cup orange juice, for the dressing...

orange zest, for the dressing...

salt and pepper...

PREPARATION

Wash and dry the greens. 
Cut anthotyros cheese in cubes.

EXECUTION

Make dressing in a food processor or shaker combining all the ingredients: the olive oil, the juice end zest of 1 orange, salt and pepper. 

Mix lettuces in a large bowl. Add orange segments and pomegranate seeds. Toss with dressing and anthotyros on top and serve.
