INGREDIENTS
1 head Boston lettuce
1 escarole
1 head green-leaf lettuce
200 gr. DODONI anthotyros
½ pomegranate, seeds only
1 orange in segments for the salad
250 ml olive oil
½ cup orange juice, for the dressing
orange zest, for the dressing
salt and pepper
PREPARATION
Wash and dry the greens.
Cut anthotyros cheese in cubes.
EXECUTION
Make dressing in a food processor or shaker combining all the ingredients: the olive oil, the juice end zest of 1 orange, salt and pepper.
Mix lettuces in a large bowl. Add orange segments and pomegranate seeds. Toss with dressing and anthotyros on top and serve.
