warm mushroom sandwich with cheese sauce

INGREDIENTS

1 onion, chopped...

200 g white mushrooms, sliced...

200 g brown mushrooms, sliced...

1 garlic clove, minced...

¼ bunch fresh basil, chopped...

4 tbsp mayonnaise ...

1 tsp mild mustard...

juice of ½ a lemon...

50 g DODONI Grated Cheeses mix...

4 thick bread slices...

olive oil...

salt & freshly ground pepper...

PREPARATION

Chop the vegetables. Gather all the ingredients for the cheese sauce.

EXECUTION

Heat 3 tbsp olive oil in a pan and saute the onion for 2 minutes until it softens. Add the mushrooms, salt and pepper and saute in medium heat, for 8-10 minutes, until most of the liquids evaporate and the mushrooms are caramelized. Add the garlic and basil, keep sauteing for another 2 minutes and remove from heat. Prepare the cheese sauce. Put the mayonnaise, mustard, lemon juice, 30 ml olive oil and the DODONI Grated Cheeses mix in a food processor and mix until well emulsified. Place the bread slices on a baking pan lined with baking sheet. Spread a few tablespoons of cheese sauce on the bread, cut 2 of the DODONI TouTost slices in half and put them on top. Divide the mushroom mix and top with the other 2 slices of cheese. Grill the open sandwiches in a preheated oven at 200C°, for 5 minutes, until the cheese melts. Serve the warm sandwiches with the rest of the cheese sauce.
