Minced meat roll stuffed with feta cheese

INGREDIENTS

1 kg minced beef...

4 slices of stale bread without the crust, soaked in water and crumbled...

1 onion, finely chopped...

½ bunch of chopped parsley...

1 grated tomato, drained...

1 tsp salt...

½ tsp pepper...

1 tsp cumin...

1 egg...

1 tbsp Dijon mustard...

1 tbsp olive oil...

4 baked Florina peppers, for garnish...

FOR THE FILLING:

300 g DODONI Feta cheese, crumbled ...

1 tbsp chopped dill...

¼ tsp pepper...

½ tsp oregano...

PREPARATION

In a large bowl add the minced meat, bread, onion, tomato, parsley, salt, pepper, cumin, egg, mustard and olive oil and mix everything well together. Cover with cling film and refrigerate for 30 minutes to 1 hour. For the filling, crumble the Feta with a fork in a medium bowl. Add the dill, pepper and oregano and mix well until combined.

EXECUTION

Place spoonfuls of the minced beef mixture on a foil. Spread it out using the back of the spoon, flattening it into a rectangle form. Add the filling in the middle of the longer side, like a string in a straight line. With the help of the foil, wrap the stuffing with the minced meat in a roll and close both edges well. Remove the foil and place the mince roll on a pan with the join facing down. Cover the entire surface of the roll with Florin peppers that have been thoroughly drained and have one end cut off. Bake in a preheated oven at 200 oC for about 1 hour. Remove from oven, brush it with olive oil, and sprinkle with fresh and dried oregano. Let cool down for 15 minutes before cutting into pieces and serving.
