250 g macaroni
50 g butter DODONI
200 g Grated Kefalograviera P.D.O. DODONI
200 g Grated Kefalotyri DODONI
2 tsp olive oil
2 tsp mustard gentle
½ clove garlic, finely chopped
50 g flour
300 g cream fresh
150 ml water
Add 2 liters of water in a pot, add tsp of salt and bring it to boil. Add in the macaroni, mix with a wooden spoon and let it boil according to the instructions of the package. Once cooked, strain and leave aside. Sift the flour. In a bowl, mix the cream with water.
In another thick-bottomed pot, on low heat, add the butter with olive oil and garlic
Once the butter is melted, start to add the flour gradually while stirring constantly.
Slowly add the cream with water to the flour and butter mixture.
Then add the grated cheese, pepper, and stir.
The mixture is ready.
Pour the cooked macaroni in and mix well with a wooden spoon.
Serve with some extra grated Kefalotyri and Kefalograviera DODONI.
