hallumi stew with couscous

INGREDIENTS

5 tbs oil...

2 packs of halloumi...

2 large onions...

1 green pepper...

1 red pepper...

1 yellow pepper...

1 cup tomato juice...

½ kg couscous...

4 cups hot water...

1 tbs mustard...

½ tbs dry mint...

3 tbs oil ...

½ tbs turmeric...

Salt and pepper...

PREPARATION

Chop the onions and peppers and sauté them in a little oil.

Take the veggies out of the pan and set them aside.

Cut the hallumi into pieces and sauté in the same oil.

After it turns golden, add the onions and peppers, salt and pepper and then the tomato juice.

EXECUTION

Let boil for 10 minutes.

Prepare the couscous while the hallumi stew is cooking.

Add some olive oil in a saucepan, add the couscous and stir once or twice, then add the hot water and the broth, mustard, turmeric, mint, salt and pepper and simmer until it absorbs all the liquid (approx. 5-7 minutes).

Serve hot with a drizzle of olive oil and freshly ground pepper on top.
