INGREDIENTS

1 kg baby goat...

3/4 cups oil...

1 big spoons butter DODONI ...

2 cups rice yellow ...

4,5 cups water ...

1 big spoon orzo...

15 Pine nuts...

1 big spoon sesame...

150 gr DODONI halloumi cut in small squares...

juice of half lemon...

salt and pepper...

5 black peppercorns...

1 dash allspice...

a dash of oregano...

strained yoghurt DODONI...

PREPARATION

Wash very good the baby goat and put it in the casserole. Season the baby goat with salt and pepper. Pour over lemon juice and drizzle with olive oil. Sprinkle over oregano.

EXECUTION

Roast in air with the casserole closed in 140°C for 1,5 hours (when it gets lightly brown from one side, turn it to the other side.) When the baby goat is ready, take it out of the casserole. Put in the casserole the pine nuts and the orzo and cook it for 10 minutes without the lid. Be careful not to overcook it. When they get roasted, add rice, the sesame, black pepper, salt, allspice and 4,5 cups of water and mix. When the rice is ready, pour the fresh butter and halloumi DODONI and leave it for 5 minutes in the warm over. Serve with strained yoghurt DODONI.
