Vegan Carrot Cake

INGREDIENTS

FOR THE CAKE:

300g all-purpose flour...

100g brown sugar...

100 g white sugar...

1 teaspoon baking powder ...

1 teaspoon baking soda...

1 teaspoon cinnamon...

1/2 teaspoon salt...

1/2 cup olive oil...

1 grated apple...

2 oat flavoured DODONI Plant'd ...

2 large carrots, grated...

1 cup walnuts...

1/2 cup raisins...

FOR THE ICING :

1 vanilla flavoured DODONI Plant'd ...

150g powdered sugar...

PREPARATION

In a bowl, beat the brown and white sugar with the olive oil. Add the oat-flavoured DODONI Plant'd and mix. Slowly add the baking powder, the baking soda, the salt and the cinnamon. Last, add the grated apple, the grated carrot, the walnuts, the raisins and the flour.

Mix well until all the ingredients are evenly combined.

EXECUTION

Grease a rectangular cake/loaf tin with a little olive oil and dust it with flour.

Pour all the mixture into the tin, spread it well with α spatula and bake for at least 45 minutes in a preheated oven set to fan.

While the cake is being baked, prepare the icing. In a small bowl, mix the vanilla-flavored DODONI Plant'd with the powdered sugar until creamy.

When the cake is ready, let it cool for at least 15 minutes. Then, pour over the icing and a few extra walnuts and raisins.
