120 gr short grain rice
800 ml DODONI fresh milk full fat 3,5%
100 gr sugar
1 tsp vanilla extract
¼ tsp salt
200 gr authentic DODONI Greek yoghurt, full fat 8%
3 ripe peaches, in thick slices
2 tbsp olive oil
2 tbsp honey
1 tbsp brown sugar
1 tsp cinnamon
Weigh all the ingredients for the rice pudding. Wash and slice the peaches for the topping.
Prepare the rice pudding. Heat a pot over medium heat and put the DODONI fresh milk, rice, sugar, vanilla extract and salt in, while stirring occasionally. When it comes to a boil, lower the heat and cook slowly for about 30-35 minutes, stirring occasionally so that it doesn’t stick to the bottom of the pot.
When the rice is well cooked and the pudding has thickened, remove from heat. Let it cool for 10 minutes and add the authentic DODONI Greek yoghurt, mixing gently so that it is well incorporated. Divide the rice pudding among serving bowls and let them come to room temperature or put in the fridge until serving time.
Prepare the caramelized peaches. Mix the olive oil, honey, brown sugar and cinnamon in a bowl. Add the peach slices and toss gently. Spread the mixture on a baking pan lined with baking sheet (one layer) and bake in a preheated oven at 180°C, for about 35 minutes until well cooked and caramelized. Serve the cold rice pudding with the caramelized peaches (either warm or at room temperature).
